Selvatico is a free spirit, a Mezcal Joven, distilled from piñas of Espadin agave, grown in the steep and wild hills of San Juan del Rio in Oaxaca, Mexico. It is a journey that begins in the hands of master mezcalero Virgilio Velasco: the agave, buried and cooked for days with pine wood, which ensures slow and delicate smoking, continues its cold fermentation and distillation process in copper pots. A centuries-old artisanal technique that has remained intact. Selvatico has a flavor mapping that ranges from orange peel to butter, pepper to minerals. Perfect in mixology because its unique, lingering and delicate flavor enhances the flavor of any cocktail with its soft smoky notes.
